One of my favourite side dishes is scalloped potatoes. They go great with chicken and vegetables, alongside Thanksgiving dinner, with steak, or even on their own! The following is my super easy scalloped potato recipe and step by step instructions.
What you’ll need:
- 4 medium potatoes, any variety you prefer
- 1 can of cream of mushroom soup
- 1 cup of your preferred cheese, grated.
Wash your potatoes and peel the skins off. Preheat the oven to 350°F.
Slice the potatoes to your desired thickness. We have a slicer that we were able to use, but a knife works just as well! I prefer to slice thinly since I don’t boil the potatoes first. This way, they cook a little faster.
Place the potatoes in your casserole dish and coat in mushroom soup. Make sure they are well coated! Mix it up until the mushroom soup is evenly spread throughout the dish.
Grate your cheese of choice. Personally, I prefer a colby/jack blend, but feel free to try something different. Spread the cheese in an even layer across the top of the potatoes. If you’re like me, and you love cheese, mix some in with the mushroom soup and potatoes, and then add a layer on top for some extra cheesy goodness.
Place the dish in the oven for about 30-40 minutes, or until cheese is golden brown and the potatoes are soft. To check if the potatoes are soft, stab a toothpick through one. If it goes through easily, they’re ready!
